Quickie White Chicken Chili

You are gonna love how simple this recipe is. This is your go-to recipe when you have no time to prepare a meal but you have some leftovers and a few things in the pantry. I try to keep some cooked chicken in my freezer for situations that come up when I need to prepare a meal fast (when you would normally call the pizza guy).

Four ingredients:

  • leftover chicken
  • salsa, pico de gallo, or salsa verde is also good (just try to make sure it has no sugar added!)
  • large can of beans or two small cans, or leftover beans
  • chicken broth

Put all ingredients in a soup pot. You can add some seasonings if you like. Maybe something with a creole flair or just simply some chili powder. Whatever suits your taste. I didn't even add seasonings and this was perfect. It depends on your salsa I guess, but this was fresh so the flavors weren't really deep like cooked salsa would be.

Simmer on low till hot.

I keep chicken broth in my pantry at all times. I had some leftover rotisserie chicken and about half a container of pico de gallo. So I started just throwing these items in a soup pot.

DSC00552It's a good idea to keep some canned beans in your pantry. I try to use dried beans most of the time because it's less expensive this way. However, I keep a few cans of already prepared beans in my pantry as well, because, THAT is cheaper than calling the pizza man!

DSC00555Because I follow the Trim Healthy Mama plan, I only added white meat to my bean soup here.

DSC00556I let this simmer on low while I helped the kids finish up their homework, folded a load of clothes and unloaded the dishwasher. Then we sat down to a nice warm bowl of delicious soup. We did have just a few crumbs of baked tortilla chips in a bag that I crushed up a little to add on top. You can also add a small pinch of low fat cheddar or even a small amount of low fat sour cream to this as it is considered an E meal. If you are not following the Trim Healthy Mama plan, just throw on some wonderful cheese, sour cream or whatever you like!

Quickie meals like this save my budget and my health. My son actually works at Papa John's Pizza, so I could eat pizza at half price anytime I want. Ahhhh, the pain of it! Occasionally he will bring home pizza, cheese sticks or cinnamon pies that I try to turn down because even though they are half price, they are not half the calories!
