Valentine’s Day Vitamin C Gummy Hearts

Ingredients
  

  • 1 cup of boiling water
  • 3/4 cup fresh squeezed lemon juice
  • 1/4 cup fresh squeezed orange juice
  • 6-8 tablespoons of gelatin preferably grass fed if you can find it
  • 4 Tbsp fruit juice sweetened red jam I like Trader Joe's raspberry, but it does have seeds, so choose according to your own preferences
  • 1/4 cup or more honey or preferred sweetener I like mine super sour, so please taste before you pour into molds, if you like yours sweeter, add more)
  • 2,000 mg Vitamin C crystals

Instructions
 

  • In a large glass bowl combine the boiling water, juices, Swerve and jam until well blended (I like to use an immersion blender for this
  • Add gelatin and mix well
  • Add vitamin C crystals last and mix until completely dissolved
  • Taste for sweetness, then pour into your heart shaped molds, or Lego shapes, fruit shapes, bear shapes
  • Put molds in fridge for about 30 minutes to an hour
  • Pop out of molds and enjoy!

Notes

TIPS:
  • Before I pour my liquid into the molds, I place the molds on a solid tray like a cutting board or cookie sheet to prevent spills
  • Clear out a spot in your fridge BEFORE you begin so when it is ready you can stick it directly into the fridge
  • I cannot stress enough how important it is to TASTE before you chill… only you know how sour the children will like it
  • Substitute grape, apricot, strawberry, super-fruit or other jams to obtain different colors, or leave out to get a pale yellow
  • I like to put my gummies in cute glass jars and store in the “snack” jar for my children to grab and go
  • These hold up well in lunch boxes
