Salt and Vinegar Roasted Baby Potatoes

Ingredients
  

  • 2 pounds petite gold potatoes cut in half
  • 3 tbsp oil use a neutral oil
  • 3 tbsp malt vinegar or malt vinegar powder look for one without caramel color
  • salt and freshly cracked black pepper
  • chives or dill for garnish

Instructions
 

  • Heat oven to 400 degrees F
  • Mix potatoes with salt, pepper, oil and vinegar
  • Roast for half an hour or until golden brown and fork-tender
  • Put potatoes in a serving bowl and add salt and pepper to taste (see note)
  • Top with chives and serve!

Notes

If you like malt vinegar, you'll love these potatoes. My preference is to add a sprinkling of Malt Vinegar Powder after bringing them out of the oven. The powder can be a bit hard to find. When searching for the liquid malt vinegar look for one without caramel color added! 
**Warning - Malt Vinegar is not gluten free.
