Cajun Black Bean and Chicken Fiesta Patties with Chipotle Mayo

Part cajun, part tex mex these delicious black bean and chicken patties will put the giddie up in your get-along! Pair with a side of hot pickled okra and you'll be saying ooooohhhh-weee!

Ingredients
  

  • 2 chicken, canned drained well
  • 1 black beans rinsed and drained well
  • 1 large egg
  • 1 small onion diced
  • 1 red bell pepper diced
  • 1 poblano pepper diced
  • 1 tbsp blackening, Cajun, Creole, or taco seasoning *see note
  • tbsp glucomannan or flour optional
  • salt to taste
  • pepper to taste

Chipotle Mayo

  • 1/4 cup mayonnaise
  • 1 chipotle pepper in adobo sauce

Instructions
 

  • Make sure your ingredients are drained well before mixing together so as not to end up with a mixture that is too wet to form patties.
  • Gently mix all the ingredients except flour or glucomannan in a bowl.
  • Shape into patties (if you'll put this on buns, shape to the size of the buns you're using)
  • Optional: coat the outside in either flour or glucomannan to crisp up the outside a bit and prevent sticking or falling apart.
  • In a skillet add enough oil to lightly coat the bottom of the pan, heat to medium-high (about a 6 on a 10 point range)
  • Add patties, cook until browned, flip, brown second side, then set aside on a plate for assembly or eat as is.

Chipotle Mayo

  • In a mini food processor, blend mayo and chipotle pepper till smooth.

Notes

You can season these with any Mexican blend spices or even taco seasoning. The blackening season that I mix for my cooking is: 1/4 cup paprika, 1/4 cup garlic powder, 1/4 cup chili powder, 1/2 teaspoon cayenne pepper, 2 teaspoons salt.
