Lemon Garlic Parmesan Shrimp Zoodles

Zingy lemon and savory garlic and parmesean compliment the flavor prfile for these zoodle and the shrimp completes the dish!

Ingredients
  

  • 12 ounces zucchini noodles or other low-carb noodles
  • 2 Tablespoons avocado oil
  • 6 Tablespoons butter
  • 3 garlic cloves minced
  • 1 1/2 pounds large wild-caught shrimp
  • 1 teaspoon italian seasoning
  • 1/2 cup Parmesan cheese
  • basil
  • broccolini
  • lemon juice
  • salt and pepper to taste
  • red pepper flakes optional

Instructions
 

  • Heat oil and 1/3 of butter (2 tablespoons) in pan over medium heat, add minced garlic and optional red pepper flakes.
  • Heat till fragrant. Add shrimp to pan and cook until shrimp turn pink, remove and set aside, do not wipe pan
  • To the same pan, add the broccolini and seasonings, cooking till tender.Add the zucchini noodles to the broccolini, just to warm, add shrimp back to pan along with the rest of the butter.
  • Top with lemon juice.
  • Serve with Parmesan cheese and enjoy! 

Notes

Alternatively, use shell-on shrimp - skewer and grill it.
