Baobab Banana Muffins with Hibiscus Flowers

Chock full of Vitamin C and tartly-delicious, these muffins are cute and healthy. Enjoy them with or without the hibiscus on top.

Ingredients
  

  • 2 TBSP butter for buttering the pan if you don't use paper liners
  • 2 eggs
  • 1/2 cup coconut sugar or brown sugar if you prefer
  • 2 ripe bananas if your bananas aren't ripe, try adding 2 tbsp maple syrup
  • 1 cup all-purpose flour or gluten-free baking mix 2 options listed in post
  • 2 TBSP ground flaxseed
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 TBSP Baobab powder
  • Dried Hibiscus Flowers optional
  • Maple Syrup optional

Instructions
 

  • Drop a few hibiscus flowers into a cup of hot water to allow them to soften
  • Preheat oven to 350 degrees Fahrenheit.
  • Butter the wells of the muffin pan
  • Mix bananas in a mixer till creamy.
  • Add in the two eggs, vanilla extract, coconut sugar, and maple syrup
  • Add in dry ingredients, including Baobab
  • Divide batter into muffin wells (I prefer to use unbleached paper liners but if you don't use them, use butter to keep the muffins from sticking)
  • Add some hibiscus flowers to the top of the muffins
  • Bake at 350 degrees for 15-20 minutes or until a cake tester comes out clean

Notes

If you prefer gluten-free, I have made these with both the Trader Joe's gluten free baking mix as well as Bob's Red Mill 1 to 1 Gluten Free Flour
