Baobab Banana Muffins with Hibiscus Flowers



  1. Drop a few hibiscus flowers into a cup of hot water to allow them to soften
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Butter the wells of the muffin pan
  4. Mix bananas in a mixer till creamy.
  5. Add in the two eggs, vanilla extract, coconut sugar, and maple syrup
  6. Add in dry ingredients, including Baobab
  7. Divide batter into muffin wells (I prefer to use unbleached paper liners but if you don't use them, use butter to keep the muffins from sticking)
  8. Add some hibiscus flowers to the top of the muffins
  9. Bake at 350 degrees for 15-20 minutes or until a cake tester comes out clean


If you prefer gluten-free, I have made these with both the Trader Joe's gluten free baking mix as well as Bob's Red Mill 1 to 1 Gluten Free Flour
